Recipe: Carrot Cake Muffins

A dear work friend gave me this recipe for Carrot Cake Muffins years ago and I came across it the other day and decided to give it a go. 

These muffins are so simple to make just mix and bake no fuss and best of all with real bits of carrot they're definitely healthy too!


Carrot Cake Muffins

Ingredients
2 cups finely grated carrots
2 eggs
1 cup sugar
3/4 cup oil
1 tsp vanilla essence
1 & 1/2 cups self raising flour
2 tsp cinnamon

2 tsp mixed spice
1 tsp baking soda
1/2 tsp salt

Method
Mix it all together, put into paddy cases in a muffin pan and bake at 180 degrees for about 15 minutes
(If you want a cake bake at 180 degrees for 45 - 60 minutes)


Cream Cheese Icing
2 oz cream cheese
1 cup icing sugar
1 oz butter
1 tsp vanilla
Few walnuts chopped

Method
Mix ingredients together, ice muffins and sprinkle some chopped walnuts on top


These make perfect snacks for the lunchbox (if they last that long!)

Carrot cake is my absolute favourite it's a mixture of sweet and savoury.

  1. Cream cheese icing, how I love you! I have never made carrot cake before but have been feeling like doing some baking so maybe I'll give these a go. I do like carrot cake with LOTS of cream cheese icing.

    I've decided I'm having apple pikelets for breakfast tomorrow - normal pikelet mix with an apple grated up and mixed in. Makes for lovely moist pikelets.

    Also, I really think I need to get me a cake stand and cover!
