Rogan Josh on the Stovetop

Not to be deterred from my death by slowcooker disasters I've had to date, I decided to give the Women's Weekly Slowcookers book another go. This time I choose a recipe to cook on the stove top, instead of the electric slow cooker. The oven is unusable at the moment due to an incident with the cauliflower cheese bake being dropped all through it, yes cheesy creamy sauce + hot oven plate = not good! So stove top cooking it is!

The ingredients list might look daunting but its mainly spices so don't be alarmed. It was easy to make and smelt delicious and fragrant while it was cooking away. Enjoy!

Serves: 4
Prep & Cook time: 2 1/2 hrs
Serve Rogan Josh with warmed naan bread and cucumber raita

2 tsp ground cardamom
2 tsp ground cumin
2 tsp ground coriander
1kg boned leg of lamb, trimmed, cut into 3cm pieces
20g butter
2 tbs vegetable oil
2 medium brown onions, sliced thinly
4cm piece fresh ginger, grated
4 cloves garlic, crushed
2 tsp sweet paprika
1/2 tsp cayenne pepper
1/2 cup beef stock
425g canned crushed tomatoes
2 bay leaves
2 cinnamon sticks
3/4 cup yogurt
3/4 cup roasted slivered almonds
1 fresh long red chilli, sliced thinly

Cucumber Raita
1 cup Greek-style yogurt
1 Lebanese cucumber seeded, chopped finely
1 tbs finely chopped mint

1. Combine cardamom, cumin and coriander in medium bowl, add lamb, toss lamb to coat in spice mixture.


2. Heat butter and half the oil in large deep saucepan; cook lamb in batches, until browned all over. Remove from pan.


3. Heat remaining oil in same pan; cook onion, ginger, garlic, paprika and cayenne over low heat, stirring, until onion softens.


4. Return lamb to pan with stock, un-drained tomatoes, bay leaves and cinnamon. Add yogurt, 1 tbs at a time, stirring well between each addition; bring to the boil. Reduce heat; simmer, covered, about 1 1/2 hrs until lamb is tender.


5. Meanwhile, make cucumber raita.

6. Sprinkle lamb with nuts and chilli off the heat; serve with raita.


P.S. I added potatoes to mine, peeled and chopped when I added the tomatoes as I thought it needed some veggies
P.P.S. I didn't have naan bread so I served it on bed of rice with poppadoms on the side Pin It Now!
