A dear work friend gave me this recipe years ago and I came across it the other day and decided to give it a go. I'm so glad I did it was so simple to make just mix and bake no fuss. Best of all with real bits of carrot they're definitely healthy too!
Carrot Cake MuffinsIngredients
2 cups finely grated carrots
2 eggs
1 cup sugar
3/4 cup oil
1 tsp vanilla essence
1 & 1/2 cups self raising flour
2 tsp cinnamon
2 tsp mixed spice
1 tsp baking soda
1/2 tsp salt
Method
Mix it all together, put into paddy cases in a muffin pan and bake at 180 degrees for about 15 minutes
(If you want a cake bake at 180 degrees for 45 - 60 minutes)
Cream Cheese Icing
2 oz cream cheese
1 cup icing sugar
1 oz butter
1 tsp vanilla
Few walnuts chopped
Mix together, ice muffins and sprinkle some chopped walnuts on top

Cream cheese icing, how I love you! I have never made carrot cake before but have been feeling like doing some baking so maybe I'll give these a go. I do like carrot cake with LOTS of cream cheese icing.
ReplyDeleteI've decided I'm having apple pikelets for breakfast tomorrow - normal pikelet mix with an apple grated up and mixed in. Makes for lovely moist pikelets.
Also, I really think I need to get me a cake stand and cover!
