I finally got my hands on my Mum's famous party sausage rolls recipe and I've made these tasty little morsels twice now and they are always a crowd pleaser.
Honestly, there is no substitute for handmade sausage rolls Vs frozen store bought sausage rolls - the flavour in homemade is way better and cost about $7 to make 4 dozen which is really good value too.

Mum's Party Sausage Rolls
Makes 4 dozen
Ingredients
500g sausage mince
1 carrot, grated
1 brown onion, chopped
2 tbs tomato sauce
2 tbs worcester sauce
3 slices white bread, crusts cut off, diced
1-2 tbs mixed herbs
1 tbs garlic steak spice
Salt and Pepper
4 sheets frozen puff pastry, just thawed
1 egg, whisked
Extra mixed herbs or sesame seeds for garnish

Method
Get all your ingredients out so you are ready to rock and (sausage) roll
Add all the ingredients into a large bowl
Get your clean hands in and mix together until you have a nice consistency
Cut each pastry sheet in half and spoon mince down middle of pastry
Brush edge of pastry with egg wash and roll up to seal
Brush top with egg wash and sprinkle on sesame seeds or mixed herbs
Use a sharp knife to cut pastry into 6 even pieces
Cover a baking tray in baking paper and place sausage rolls on top
Repeat with remaining pastry and mince mix until all used up
Once your trays are ready put in a preheated oven on 200 degrees and bake for 20 minutes
Once the pastry is brown and crispy they are ready to take out and
serve on a platter with dipping sauces
These sausage rolls can be made ahead of time and frozen and then put into the oven on 180 degrees to reheat for 20 minutes until they are hot and ready to eat.
